Mashed potato topping

  • 4 large potatoes, peeled and cubed
  • 1/4 cup unsweetened plant-based milk
  • 1 tbsp vegan butter
  • Salt and pepper to taste


  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup chopped mushrooms
  • 2 cups mixed vegetables (such as carrots, peas, and corn)
  • 1 can (15 oz) lentils, drained and rinsed
  • 1/2 cup vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • Salt and pepper to taste


  1. Preheat the oven to 190°C.
  2. Place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 10-12 minutes.
  3. Drain the potatoes and return them to the pot. Add the plant-based milk and vegan butter, and mash until smooth. Add salt and pepper to taste.
  4. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened, about 3-4 minutes.
  5. Add the chopped mushrooms to the skillet and cook for another 5-7 minutes, until the mushrooms are slightly browned.
  6. Add the mixed vegetables to the skillet and cook for another 5 minutes.
  7. Add the lentils, vegetable broth, tomato paste, dried thyme, salt, and pepper. Stir to combine.
  8. Transfer the lentil mixture to a baking dish.
  9. Spoon the mashed potatoes on top of the lentil mixture and spread it evenly.
  10. Bake for 30-35 minutes, or until the top is golden brown and the filling is hot and bubbly.
  11. Let the shepherd's pie cool for a few minutes before serving. Enjoy!
